Vegetable rest fractions

Waste or second class vegetable products originating from field, storage houses, sorting lines or processing lines provide valuable resources. We transform such material into valuable co-streams of the main crop products to be utilized in new products for food,feed, agricultural purposes as well as in food supplements and health related products.

Our research activity within this topic focus on raw material quality optimization, including elicitor treatment of raw materials. Waste fractions of root vegetables originating from cracked, broken or malformed products as well as outer leaves of head cabbage has been tested in smoothies and purees. Peel of potatoes are investigated in biodegradable soil films to spray on soil as weeds protection of crop plants.

Quality of co-stream raw materials can be improved to fit specific products. We aim to improve biochemical content by elicitor treatment of raw materials and fermentation of products.
